When looking for exciting new winemakers in Burgundy, we find that following our organic noses is an infallible guide to sourcing quality small estates. Organic equals more work, less juice, more thought, care, and passion on the part of the winemaker. And so it is at Domaine Pavelot. Great wines with freshness and vitality, from a charming family run estate, which is well off the international radar as a Burgundy hot spot.
The creation of the Heresztyn-Mazzini vineyard marks the beginning of a new adventure for Florence, from Burgundy, and Simon, from Champagne. After ten years spent working on the family vineyard in Gevrey-Chambertin, the couple decided to start their own venture.
The estate currently covers 5.5 hectares spread across the villages of Gevrey-Chambertin, Morey-Saint-Denis, and Chambolle-Musigny. 2012 saw the first vintage from Heresztyn-Mazzini, an estate specialising in fine Burgundy red wines.

Domaine C. Perrin
After few years of trial started in 2003, Domaine Perrin obtained their organic certification in 2008.
At the same time, organic philosophy goes deeper with this family, as they decided straight to apply strict organic rules in the winery as well. « That was a way to respect our work and the harvest from the vineyard ».
Ageing is made into barrels during 11 to 13 months with the lees (to bring complexity and roundness) for the reds and 10 months for the whites.
Marc Rougeot now assisted by his son Pierre-Henri, runs a 13 hectares family and traditional estate in Meursault. The wines he produces come from Meursault, Monthélie, Saint Romain, Pommard & Volnay.
Both the works in the vines and in the cellar, are carefully done with vinifications that are soft and meticulous bring the wines more and more precisions and terroir expression!
