For nearly 30 years this domaine, let by Marc Guillemot his wife Pierrette, and more recently their daughter Sophie, has been guided by a biodynamic spirit. More organic than just organic, this agricultural engineer uses plant based treatments steeped in rainwater, to bring relief and nourishment to the vines or as prevention. The soils here in the lieu-dit of Quintaine, between the villages of Viré and Clessé are not clay/limestone based like much of Burgundy, but are rather loam and silt and while easier to work than clay based soil, they require more infusions to keep them fertile. What is the result of all this intervention and decades of passion and sweat ? The family produces just one still Chardonnay (and one sparkling wine) and the result, vintage to vintage is a rich, unctuous wine, even Reisling-esque in its weight, with a suggestion of petrol and loads of citrusy, mineral tension. A full-bodied wine that can stand up for itself at the table and a great companion to golden brown roasted birds. Yum !
